Our ears were trained the old-fashioned way, in studios, at a time when music was recorded on tape and every take had to be perfect, with the standards of majors like Sony-BMG. We know the warmth of a preamp, the dynamics of an acoustic drum kit, and the importance of human imperfection in creating groove.
